Located in the historic James Gregorie House at 28 Broad Street, The Establishment is a seafood-centric restaurant focusing on the fresh and sustainable ingredients surrounding the area. Comfortable fine dining at its best, the spacious and elegant eatery houses two large and comfortable dining areas, a full bar and wine cellar, two private dining rooms, and an open kitchen with a chef’s counter.

Something about Amarone della Valpolicella that you probably didn’t know: made with the proprietary grapes of  Corvina, Corvinone, and Rondinella, the fruit must be fully ripe and in perfect condition when picked. The grapes are then placed in single layers on bamboo mats and placed in a drying room called a fruttai. The grapes remain in the drying room for 3-4 months. This leads to a reduction in the level of acidity and heightens flavor concentration.⁠

Grifalco is an excellent producer of Aglianico del Vulture. Owned by the Piccin family, who were originally wine producers in Tuscany, they decided that southern Italy, Basilicata in particular, was more promising. Notes of blackberry, black cherry, and licorice carry this well-balanced wine which drinks tremendously alongside anything from the grill.⁠
