The Michelin Guide unveiled its inaugural American South edition on November 3, 2025, at a ceremony in Greenville, South Carolina, marking a momentous occasion for Southern cuisine. The Establishment's recognition celebrates its commitment to sustainably sourced seafood and consistently excellent dining experiences.
Located in the historic James Gregorie House at 28 Broad Street in downtown Charleston's prestigious South of Broad neighborhood, The Establishment has distinguished itself through its unwavering dedication to fresh, sustainable ingredients and refined yet approachable cuisine. Michelin inspectors praised the restaurant for its ever-evolving menu centered around the freshest fish available, noting that while signature dishes like gnudi with creamy sauce and lump crab remain mainstays, the menu shifts often to showcase seasonal seafood.
The Michelin Guide's recognition reflects the restaurant's philosophy of letting exceptional ingredients shine through precise, unfussy cooking techniques. Inspectors highlighted the kitchen's approach as "far from pretentious," noting dishes like pan-seared halibut with aji amarillo sauce that demonstrate the restaurant's commitment to simple, beautifully executed preparations.

The Michelin Guide evaluation process is rigorous and anonymous, with inspectors making multiple visits throughout the year. Restaurants are assessed using five criteria: quality products, flavor harmony, mastery of cooking techniques, the chef's personality reflected in the cuisine, and consistency between visits and throughout the menu.
The Establishment joins an elite group of Charleston restaurants recognized in this historic guide, including three that received Michelin Stars and three that earned the Bib Gourmand distinction for exceptional value. The recognition places The Establishment among 228 restaurants honored across the American South, with only 159 receiving the "Recommended" designation.
