Atlanta-based restaurant group Concentrics looks to open seafood house The Establishment at 28 Broad St. next month. Built in the historic James Gregorie House, the new addition to Charleston food and beverage scene will serve dinner seven nights a week with a "coastal grill" menu.
Chef Matt Canter (formerly of FIG and Park Cafe) says what will differentiate The Establishment from other local seafood restaurants will be that he isn't building the menu around a raw bar. He's focusing on fish and vegetables. "I want to combine those two, and not have the flavors compete, while keeping them balanced and clean. I want the plate to sparkle, pair well with wine, and be approachable for everybody." he says. Canter also says that he will keep a few non-seafood items on the menu, like lamb or duck in the spring, to please everyone at the table.
Concentrics partner Todd Rushing says that he thinks of The Establishment as a neighborhood place — a restaurant that locals can dine at two or three times a week. There's no white table cloths in the dining room, and the open kitchen and large bar should make for a lively space (though there are quieter spaces up front). Rushing says The Establishment will be a restaurant that a patron can come in and have a plate of seafood and a glass of wine on a weekday or for a big night out, splurge on wine from the selection of 3,000 bottles.
Oh, and for those who hate coming downtown for the lack of parking, The Establishment has its own lot behind the building — something practically unheard of in the area.

Described as seafood-centric, The Establishment plans to emphasize unpretentious preparations, such as buffalo-style Cherrystone clams and a halibut chop with roasted green garlic jus. Matt Canter, formerly of The Park Cafe, will lead the kitchen; Brad Mogan, late of Rappahannock Oyster Bar, will serve as general manager.
